Just two discoveries to get out of the way before we start dicing with low-carb life on the road (in the Philippines) in a couple of days' time.

First up, cream cheese bread.

This makes a great alternative to the low-carb buns I talked about last time. They're more like savoury muffins than bread, I suppose, but they're really tasty. They go especially well with curry (the coconut flour gives a very good flavour), and spread with a lick of cream cheese, they also make a good breakfast.

The second experiment was tamale pie (pictured at the top).

I made the bottom bit completely differently (with braised meat, vegetables, cheese, and a can of tomatoes). I modified the top bit as well, making half the quantity, which easily covered the dish; omitting the artificial sweetener (sweetener?? -- seriously??); omitting the xanthan gum (because I have no idea what it is); and replacing the almond milk with ordinary milk (because that's what we had).

It turned out really well (especially the first half, which we ate with a nice bottle of Australian red).
